The Calamansi is a small citrus fruit from the Philippines. It is a hybrid of the Chinese kumquat and the tangerine. This fresh fruit vinegar is delicious in salads, with fish, shellfish and crustaceans (think Ceviche) or desserts. A favorite in the restaurants we work with.
